Finally... Food for Friday...

OK, earlier today I was going to post a recipe, but the Spirit led me to ask you to pray for Christy

The recipe I am sharing today is a fav around our house and with our friends & family!
I would love to hear back from any of you who try it out! It's very good... and if you eat it w/ friends there are no calories! Ha Ha... at least that's what I always say!

Enjoy!

Chicken & Wild Rice Casserole

Ingredients
1 (6.2-ounce) package fast-cooking long-grain and wild rice mix
1/2 cup butter or margarine
1 small onion, chopped
1/4 cup all-purpose flour
1 1/2 cups chicken broth
3 cups chopped cooked chicken
1 1/2 cups half-and-half
1 (6-ounce) can sliced water chestnuts, drained
1 (4.5-ounce) jar sliced mushrooms, drained (I use fresh asparagus instead)
1 tablespoon chopped fresh parsley
1 teaspoon salt
1/2 teaspoon pepper
1 (2.5-ounce) package sliced almonds

Preparation
Cook rice mix according to package directions; set aside.
Melt butter in a Dutch oven over medium-high heat. Add onion, and saute until tender. Add flour, and cook, stirring constantly, 1 minute. Add broth, and cook, stirring constantly, 1 to 2 minutes or until mixture is thickened and bubbly.

Stir in rice, chicken, and next 6 ingredients. Spoon into a lightly greased 9 x 13inch baking dish. Top with almonds.

Bake at 350° for 15 to 20 minutes or until thoroughly heated.

Yield
Makes 6 servings

Hey, I have a recipe almost the same as this one...it's delicious. I haven't made it in a long time. I think I'll get the ingredients for next week, but I'm going to put in almonds since mine doesn't have that and it sounds good!

Kristen,

This sounds incredible! Adding this to my list of recipes to try (post Weight Watchers, that is...) I love just about any recipe from Southern Living. Thanks for sharing!

Thanks also for sharing and linking us to Christy. I immediately lifted a prayer for her (and her family), and also left a comment for her. Your kind heart for others is always such a blessing to me. = )

One final thing...thank you for your kind words about my 100th post. I'm privileged to know you, my friend.

Blessings,
Tracy

I will certainly be trying this dish out. Thank you so very much for posting it. I also was very touched by your milk, M&M and drugstore post. We never ever know, do we? That's the best part of it, not letting our left hand know what our right hand is doing.

Love to you,
Yolanda
